Yes, I did basically the same thing. Used the same hull framing as on the starboard side on the port side. Used good mahogany 1 x 3 with a 1 inch cleat for support on inside section of bunk. I own a 28 fly bridge with 50 gal fuel tanks. I took out the recirc toilet and installed a real head with 25 gallon holding tank. Mounted the tank between the two fuel tanks. Worked great!
