You can go up to 1.5 with the stock struts. I don't think you can go any bigger on them. My engines put out 737 ftlbs torque using 1.5 shafts, But I have 1.53 reduction, not 1.75, Here is a company that can make the struts you need. You can also check with Beacon https://strutsruddersbearings.com/

I’ve repaired sections of the bow deck by removing the top fg layer with a vibrating saw, replaced the punky balsa core with like material, epoxy coat the balsa, overcoat the balsa and replace the deck section, saving the nonskid pattern. Ran a thin bead of West epoxy in the saw lines...

The OP did not do the repower. My thoughts I don't see why it would not work. Being fuel-injected you should see a slight gain in fuel economy.
