Propane is common on sailboats . All the sailboats I have seen that use propane have a locker for the tanks . the locker is set up so if the tank leaks the propane will vent out side the hull ( vents at the bottom of the locker) . Propane is heavier then air and can settle in the bottom of the hull .

There have been boats blown up due to propane , so you need to be careful and do it right. And yes you can say the same for gasoline .
Myself ? I would not have it or candles for that matter  smoking ? back deck at 20+ knots only

My 83 Carver Mariner came from the factory with the optional propane 3 burner stove and oven. The tank is in a locker mounted on the swim platform. There is a control panel near the stove with a switch to turn on the gas by way of a solenoid mounted on the tank. Works very nice.

Best place to put a tank IMO. It's low and overboard.

I use a standard 20lb propane tank, it sits where the refrig would go in the wet bar in the cockpit.

I never had a problem and always shut it off at the tank when done.

I just use it for bbq.

My plans where to rebuild the wetbar with a tank locker below the sink of the wetbar.

For me those little 1lb disposable tanks made BBQing a big headache when cooking lots of stuff.
