the PVC Cellular lumber, by itself is flexible but when you laminate 3 pcs together it's not. The down side to starboard is cost, and gluing it. I seen a sent up like your talking about that someone did under the platform, He used Alum square tube, Seen another set up where the guy used Weaver brackets and made mods to them and used S/S steel, Which I'll most likely do if I ever get a hard bottom dink.
I know some that needs to sell me one cause he has 3.....HINT !
Pulling the dink up on them, I plan installing a small 4 to 1 Block and Tackle set to the aft of the boats upper hull, that will be removed when not in use. "D" ideal there in a post early. I'll Update as I go....

I keep my dink up on a St Croix mini crane off the transom.
It is secured with an aluminum tube and spider web system of tagged color coded lines.
This system allows me to get the boat and motor up and out of the water.
That said, your design appears to be simpler and easier.
The concern I have for the height of the dink/engine.
Will you have enough height to keep the dink dry and secure in a following sea, in rough conditions below planing speeds or when coming off plane?

yes I should be fine on height and if the following seas are that bad I'll get back in the hole and stay there, looked at a 4207 with same kine of set up and it seemed ok...
dink and motor come in at 150 lbs.

Wow your shared davits looks amazing. Does you provide these davits on rent or you have created them just for your personal use. Recently I have also add a davit system in my boat which is purchased from an online store it is UMT International. My davit also looks like your's one. Incredible and inspirational work done by you alexander38. Perfect share.
