Hopefully you are using a tempering valve down stream of the water heater. Use a Watts 70A to temper it down to no greater than 130 and you'll have a "virtual" tank much greater than 6 gallons.

Also, If you have 180 water don't use plastic pipe/ tube between the tank and the tempering valve. The first 18" going into the tank(cold side) should not be plastic either.
