I would suggest a cylinder leakage tester, available at a reasonable price from Harbor freight.
They are also slangly called a blow down gauge. To use put cylinder at TDC then using compressed air set gauge at 100% open to cylinder via spark plug hole, as I recall should retain about 80%. if not you can listen to oil fill for air leakage, exhaust for valve there, carby for leakage on intake side or at thermostat/heatexchanger. any bulbles there are either head gasket or cracks.
They are good diagnostic tools for issues such as yours. Of course you have to do all 8 cylinders.

I am dumb.
Pulled the recirculating water pump today (I wasn't about to order a long block without checking) and, sure as ship, there was a pencil sized hole in the cover.
Now I need to find a new one, and get her in.
Fingers crossed, but I am fairly confident that this is the issue, rather than a cracked block!

heefus. Saw this once in an olds I had. The timing case was the back of the water pump and had eaten through, water in crank, put on new one fixed, I should have thought of it. If you need a timing cover, got two extras for 318s.
Olds dealership diagnosed it and went right to the problem and I was on the road away. However the timing housing was mad of aluminum not cast iron like these 318s.

This one is cast iron, as are the ones I have looked up online. Just trying to track one down now, so looks like this weekend is out

Thanks to Larry, the boat is running again!
Finally got her all buttoned back up again yesterday. Naturally, every hole fought me, every bolt dropped out of the bottom of the box, and I bled everywhere
The carb needs to be cleaned out, she doesn't like idling at the moment, but other than that we are in good shape.

Great news now go get dem fish! Oh and for real, boats are knucklebusters for sure. Fiber glass and knucks don't mix very well.
