Advice Sought for F25 pull and update

I've got $20 worth of brass freeze plugs to install in my LM 318, and of course it's going to take a couple of thousand to pull the boat and engine. you gotta love old boats! So I'm also going to replace the old original galvanized fuel tank while engine's out, steam clean bilge, have working tilt and trim (!) checked and serviced, and finish the engine tuneup I had started when the freeze plugs starting spraying water. The old original compact Raritan head needs rebuilding, so I'm going to replace - maybe with Marine Elegance electric - and I already have a black tank? The old undercounter refrigerator was long dead - so what to replace with? And how about a small point of use electric water heater under the galley counter to run on shore power? We're on large fresh water lake, great boat slip with shore power, and only spend a night out on lake coves and islands occasionally. I love how simple the old girl is, F25 hardtop, but what are your ideas and suggestions for modest upgrades, with priority to mechanical/electrical/gauges etc?

It looks like the main beef people have is the price, which I note is far less than an engine pull. Disclaimer: I have no experience with these. I just looked at replacement plugs for my own edification and found something that was not simply a rubber plug, or the factory plug, which I presume you have no room to install. <Hugs tricabin, with full-beam engine room>

Thanks, the engine hold on that F25 is full of engine, so full you can't - or I can't - even get the old leaking plugs OUT. I did manage to get one out after nearly four hours of one handed pecking and put back in a rubber version of the one on your link. And that was the most accessible plug of the 8+ that are down in there. Plus the old galvanized gas tank is the original and past due for a change. But I've searched high and low for a way to get corroded freeze plugs out with the engine in, no luck so far. But I'm all ears!
