Oil coolers are new to me. Do they have to be drained or does the engine oil drain back into the pan?
While I'm here, another question.
While running the engines and genny, should the 115 battery charger be turned off till I shut down the engines or does the charger recognize the charge from the alternators?

Don't worry about turning the charger off.
You'll get most of the oil out. Some may still be in the lines, etc. Not much to worry about though. I like to loosen or remove the filter first.
Tip: When unscrewing the oil filter, take a gallon sized ziplock bag ( a good brand) and put over the filter while you unscrew. It'll catch and contain 99% of the oil and help eliminate the mess. Zip up and dispose...

damm i thought i was the only one that used the bag trick I also put a a oil diaper under the filter to catch any other drips
