She was a 1969 36 ft wooden beauty with big blue 440s that we'll miss forever.

How about starboard easy to work with and comes in white or black.
On my last boat I had custom wood grain panels made to order they looked great every hole and cutout even silkscreening was made to order but it was pricey.

You are correct about the edges if you buy a big sheet and cut it the edges wont look great unless they are all recessed up against some other surface.
