thermostat temp question

My starboard engin is running at 130 degrees and my port is at 140. My problem is at about 3000 rpm's I'm getting white smoke on the starboard side. Just had my thermostate and sender replaced and switched gauges. I think the smoke is unspent fuel as the starboard smells rich.The oil looks good and the mechanic said there aren't any leaks. These are 1983 454 gas Crusaders. Should I try 160 degree thermostats? Raw water cooled in fresh water. Any other suggestions?

So I'm still a bit confused...I have a 79 f-36 with 440s. The block and heads are fresh water (anti freeze) and the exhaust manifolds and risers are raw water cooled...what temp t-stats should I be using? My raw water is saltwater from Connecticut!
